Yes, it's a bit heavy on the fire button, but weren't all the arcade games like that ? Including Flying Shark ? It's very different hammering a firing button with one hand compared to hammering it with your thumb or one finger while also steering with other fingers of the same hand. OK. To each one...

It can be many things. But most probably it's a shortcut on the data bus or somewhere related with how the keyboard connects to the bus. I would suggest that you ran those on a real machine, so that you get the real hardware generated sound, and not that very clean thing you are getting on a PC Music editor.

Would love to listen to it being played on the real thing.
