When you send a PM it goes into your outbox. At the same time, it appears in the recipients inbox. The message will stay in your outbox until the recipient opens it. Whereupon it will disappear out of your outbox. It will then appear in your sent box.
Yep this is normal.

However, something is definitely a bit wrong, as it's not possible add more than one recipient anymore.

I gather some have reported not being able to send or receive. That's a common problem, usually due to a full inbox or sentbox (I don't know if that's the case here though).

When trying to add more than one member to a PM this error message pops up:
You tried to send a private message to too many recipients.

Step up to red alert. Sir, are you absolutely sure? It does mean changing the bulb :dance
Looking forward to summer later in the year.

The default behaviour now is to automatically delete items from your sent folder if you allow it to become full.
