Okay, so let's talk about classic Spanish games from the 80ties. Beautiful looking, with lots of colour but difficult as hell.

Being a spanish native probably makes me a bit biased, but I found that, in general, the difficulty of the Spanish games is a myth. Yes, there are some very hard games but there are plenty of others very accesible, and, after having completed hundreds and hundreds of Spectrum games with no cheating or pokes at all, I can say that, for example, Ocean games are harder to complete than Spanish games. Something that I have seen in the spanish games is that maybe the beginning is a bit harder, but not impossible to overcome, and once you have passed that part, the game becomes even easier than most of british games But that is only my personal opinion, created, I would like to say this, after having played and completed a lot of Speccy games
As for what I would recommend, I would say to try this 3 ones fisrt:
Astro Marine Corps
The Light Corridor
Mad Mix Game
I can recommend more in the next days

Even though it's essentially a memory game I'm a sucker for the Spanish style and the world it created. I even think I made it below the surface once.

In first place, Fred. A simple maze game with cool baddies. A game that have aged well. Great to play in 1984 or nowadays.
2 - Phantomas 2. I think Dinamic 'reached the peak' with this atmospheric adventure.
3 -Third, Sir Fred: Explore, fight, swim, ...
4 - Abu Simbel. I know it's hard, but satisfactory when you completed it (cheating, obviously!)
5 - Fernando Martín Basket Master. A great One-on-One basket game.
Others: Game Over, West Bank, El Misterio del Nilo, Nuclear Bowls, Dustin, Saimazoom.

For me, being also spanish native, it's difficult to choose among them all, but if I have to stick to one I'd choose Saimazoom: simple game, not a complicated plot, and not hard in excess, three ingredients of a playable and plenty of fun game.

Phantis, the part with natural boobies was nice. A bit too easy though.
